I would like to customize the appearance of categories and place them on the left hand side of the page. Example:

Cars //(this is the parent category)
- Audi
- BMW
- etc.

Anyone have any suggestions/advice or point me to a hack or function.

Either you can simply move the existing template content for subcategories, or you can use a toplist of a categories. Using the condition parent={CATID} will make the toplist show subcategories of the current category.
