It was released several months ago. It will continue to change a lot and receive new features until it gets progressively less attention due to the release of new series, but I wouldn't call it unstable.
Yes, it's only new series releases that sometimes require redoing templates (though 5.1 and even 5.0 templates should still work in 6.0, at least for the most part).

If I currently use the available 6.0.11 and customise the look & feel fully - can future upgrades be done without affecting my customisation?
