Unique text in categories |

Hi,
I can't see a way of adding a unique description to each of my categories. I am sure there is a way but I can't find it.
I am making a directory of accommodation by town and county but want to include a unique portion of text pertaining to the town or county on each individual category - I am currently making really hard work of something that might be simple but i can't see it! Please help if you can.
