Where can I see who is subscribed to a specific category? Where do I see all categories that a specific member is subscribed to? How do I unsubscribe someone from a category?
I've added a subscriber list spot on the category details page and a "manage subscriptions" option on the member admin menu (on their profile page) for you in 7.0.8 Beta 1.
Thank you! I have upgraded to the 7 series and found it now. It always amazes me how people can figure out how to subscribe but then send rude emails because they receive what they subscribed to.
Is there a way to default everyone to receive digests instead of individual notices? Some of my areas receive a lot of new items and this is where a most of the subscription complaints come into play.

In the 6.2 series, you can manually construct the URL yoursite/profile.php?action...tions&id=theiruseridnumber and if you're logged in as an administrator that should allow you to manage their subscriptions.

You can set the registration defaults to digest at Admin -> Members -> Registration Defaults.
